Skillet dinners are great weeknight family meals that are quick to make and can please a variety of tastes. I have made this recipe using bite size chicken pieces as well as ground beef. Both ways were delicious! This recipe works well when you’re trying to please a low-carb family member too!
When using ground beef, you will just brown the beef, drain the fat and proceed. When I used chicken, I browned bite size pieces of chicken in a little oil until they were cooked through and just starting to have a little color. Then, proceed with the other ingredients.
When serving, you can wrap it in a burrito, but my favorite way is served on top of a bed of lettuce & topped with fresh tomato, green onion and our cream. Yum!
Ingredients:
- 1 1/2 lb lean ground beef or chicken
- 1 large onion, diced
- 2 bell peppers, diced (I used green and orange)
- 1 can diced tomatoes with green chilis
- 2 tablespoons fajita seasoning
- 2 tablespoons water
- 1½ cup shredded cheddar and jack cheese
- Tomatoes, green onions, sour cream to garnish
Directions:
In a large skillet, brown ground beef and crumble well or if using chicken, brown bite size pieces in 2 tablespoons of oil.
Drain excess fat.
Add onions and peppers, and cook until softened
Add canned tomatoes, fajita seasoning, and water.
Cover with shredded cheese and let cheese melt.
When cheese is melted, serve over a bed of lettuce, rice or in a tortilla.
